
Ingredients:
3 eggs
1 ½ cup granulated sugar
½ cup brown sugar
½ cup heavy cream
¼ cup rum
1/8 cup banana extract
4 cups milk
1/8 cup butter
Enough stale french bread to fill a 12x12x2 pan
Procedure:
Preheat oven to 300 degrees.
Tear the bread into two inch pieces. Whisk to combine eggs, sugars, cream, rum and banana extract. In a sauce pot bring milk to a boil, melt butter, and temper eggs into milk mixture. Pour liquid over the bread and fold it into the bread. Place pan in a water bath (place the baking dish into a larger baking pan and add enough water to come up to one inch on the sides of the baking dish), and wrap it with plastic wrap and foil. Bake for one hour at 300 degrees. Remove foil and plastic and bake for 30 minutes at 350 degrees. For sauce, flavor a little caramel with ¼ ounce rum and ¼ ounce banana extract. Serves 10-12.
