Red Bean and Rice Hummus

 

1 large can of chickpeas

½ cup extra virgin olive oil

½ cup overcooked red beans

½ cup overcooked brown rice

¼ cup Paul Prudhomme Black Magic Seasoning

¼ cup Holy Trinity sofrito

2 tbsp lemon zest

Salt and pepper to taste

 

Preparation Method:

Bring can of chickpeas to a simmer and then drain.

 

Blend together all ingredients in food processor.
