Spaghetti and Meatball Tricky Treat


"Spaghetti and Meatball Tricky Treat"


Turkey Meatball

  • 1 pound of ground turkey
  • 1 egg, whipped
  • .5 cup of Italian bread crumbs
  • 2 teaspoons of parmesan cheese
  • 1 clove of ground garlic
  • 1 tsp of minced parsley
  • 1 tsp onion powder
  • 1 tsp salt
  • .5 tsp crushed red pepper

1. Mix all ingredients and form into eye ball sized balls

2. Roast on a lined sheet pan in a 350 degree oven for 15 minutes




  • 1 cup of oil
  • 1 ea spaghetti squash
  • 2 tsp salt
  • 1 tsp pepper
  • .25# shitake mushroom stemmed and sliced thin
  • .25 of a red onion peeled and sliced thin
  • 4 pieces of whole, peeled garlic
  • .25 stick of butter
  • 2 tbs capers

1. cut squash in half

2. scoop seeds out of squash

3. oil the squash

4. roast with the skin up in a 350 degree heated oven, bake for aprox 1.5 hours. The squash should be fork- tender.

5. roast garlic in the oven with oil covering it

6. saute onion on medium heat in butter for 3 mintues. Stir in shitake mushrooms

7. scoop squash out of skin and season to taste.

Plate up:

  •  lay sauce around the outer rim of the plate
  • lay pasta in the center of the plate in a circle
  • place meat balls covered in sauce  in the top portion of the plate to make 2 eye balls (place capers in the center of each meat ball)
  • make a mouth out of the onion/shitake mushroom mix
  • make chive "fangs"
  • basil chiffonod for "hair"
