"Spaghetti and Meatball Tricky Treat"
Turkey Meatball
- 1 pound of ground turkey
- 1 egg, whipped
- .5 cup of Italian bread crumbs
- 2 teaspoons of parmesan cheese
- 1 clove of ground garlic
- 1 tsp of minced parsley
- 1 tsp onion powder
- 1 tsp salt
- .5 tsp crushed red pepper
1. Mix all ingredients and form into eye ball sized balls
2. Roast on a lined sheet pan in a 350 degree oven for 15 minutes

Spaghetti
- 1 cup of oil
- 1 ea spaghetti squash
- 2 tsp salt
- 1 tsp pepper
- .25# shitake mushroom stemmed and sliced thin
- .25 of a red onion peeled and sliced thin
- 4 pieces of whole, peeled garlic
- .25 stick of butter
- 2 tbs capers
1. cut squash in half
2. scoop seeds out of squash
3. oil the squash
4. roast with the skin up in a 350 degree heated oven, bake for aprox 1.5 hours. The squash should be fork- tender.
5. roast garlic in the oven with oil covering it
6. saute onion on medium heat in butter for 3 mintues. Stir in shitake mushrooms
7. scoop squash out of skin and season to taste.

Plate up:
- lay sauce around the outer rim of the plate
- lay pasta in the center of the plate in a circle
- place meat balls covered in sauce in the top portion of the plate to make 2 eye balls (place capers in the center of each meat ball)
- make a mouth out of the onion/shitake mushroom mix
- make chive "fangs"
- basil chiffonod for "hair"
