New Orleans, La - When the Super Bowl comes to town, businesses that cater to fans are facing a big game of their own and it takes lots and lots of planning.
Busy days for Manning's Executive Chef Jared Tees are about to get a lot busier. Super Bowl parties, crowds of fans and locals and, of course, Mardi Gras, will keep restaurants like Manning's running in high gear for the next couple of weeks.
Manning's Manager Scott Hellmers says his restaurant is ready. "I think there's a certain sense of urgency. We know the city is on stage and the culinary industry is on stage this week, so we're ready to put our best food forward."
Manning's is expect triple the normal crowds and that means lots of cooking. Baby back ribs are in the smoker non-stop. "We'll do this 24 hours for probably the next week and a half just to keep up with demand," said Chef Tees.
It's a scene that's playing out in restaurants across the city as all prepare to feed thousands of football fans followed by huge carnival crowds.
