Pontchatoula Spring-Thyme Smash

2 tablespoons of diced cucumber

2 sprigs of thyme

1 splash of house-made simple syrup

2 tablespoons of house-made LA strawberry jam (or store bought alternative)

3/4 oz of house-made lavender liqueur (or store bought alternative)

2 oz of Hayman's Old Time Gin (or store bought alternative)

2 dashes of rhubarb bitters

Muddle cucumber and thyme in mixing tin.  Fill tin with ice and add strawberry jam, lavender liqueur, and gin.  Shake vigorously and strain into chilled martini glass.  Float with 2 dashes of rhubarb bitters and garnish with a fresh Pontchatoula Strawberry.
