Mediterranean Shrimp Lettuce Wraps


Mediterranean Shrimp Lettuce Wraps


  • Olive Mix
  • Lemon Shrimp
  • 4 Large Romaine Lettuce Leaves
  • Mediterranean Spread
  • Feta Cheese for garnish



  1. Gently mix lemon shrimp with olive mix and place on side of plate and garnish with feta cheese
  2. Scoop Mediterranean spread on lettuce leaves
  3. Assemble and enjoy


Lemon Shrimp (16 oz):

  • Fresh 40/50 shrimp
  • 1 gallon water
  • ½ gallon ice
  • ½ cup lemon juice
  • ¼ cup salt



  1. Bring ½ gallon of water to a boil and add 1 lb of fresh shrimp and bring back to a boil (approx 5-7 minutes)
  2. Drain shrimp into a colander and immediately stir shrimp into a ½ gallon brine solution of water, ice, ½ cup lemon juice and ¼ cup salt
  3. Drain the shrimp as soon as they are cool. Do not allow them to sit in the brine solution.


Olive Mix (12 oz):

  • Green onions -  2 tablespoons
  • Calamata olives- 2 tablespoons
  • Green olives- 2 tablespoons
  • Feta crumbles- ¼ cup
  • Extra virgin olive oil- ¼ cup
  • Sundried tomatoes-2 tablespoons
  • Diced tomatoes- 2 table spoons



  1. Thoroughly mix all ingredients with a rubber spatula


Mediterranean Spread

  • Your favorite hummus – 1 cup
  • Your favorite pesto spread -4 tablespoons



  1. Thoroughly mix all ingredients with a rubber spatula
