New Orleans Style BBQ Sauce

Serves 4

1 ea local beer, (we prefer Abita Restoration)

1/2 cup Worcestershire

1/4 cup Crystal hot sauce

2 lemons peeled

2 sprigs fresh rosemary

1/2 tablespoon fresh ground black pepper

2 crushed garlic cloves

1/2 cup heavy cream

1 lbs unsalted butter, diced

Combine first seven ingredients in a heavy bottom sauce pot and simmer over medium-high heat until reduced by about 75-80% taking care not to burn the reduction. Add heavy cream and reduce down to previous viscosity.  Reduce heat to low and slowly begin to whisk in cold butter a little at a time until all butter is incorporated. Strain sauce through a sieve and reserve warm until ready to serve.

At this point we usually like to add a little additional fresh ground black pepper and chopped fresh rosemary to the finished sauce for a little extra flavor, but this is optional.
