Sauce:

3 tbl White Vinegar

2 tbl Water

2 ½ tbl Fish Sauce (Nam Pla)

1 tbl Tomato Paste

3 tbl Dark Brown Sugar

½ tbl Dried Shrimp- pounded to a powder

1 tsp Tamarind Concentrate

¼ cup Coconut Milk

For the Dish:

1 tbl Toasted Sesame Oil

¼ cup Tofu- cut into ¼" thick 1" squares

1 tbl Shiitake Mushrooms

1 tsp Basil- chopped

1 tsp Garlic

1 tsp Hot Chili Garlic Sauce

½ lb Medium Rice Stick Noodles (Bun Tap Chua)

½ cup Pad Thai Sauce

Garnish:

2 tbl Crushed Roasted Peanuts

1 cup Mung Bean Sprouts

¼ cup Carrots- sticks

Green Onion

Cilantro Leaves

Fresh Lime
