Poydras Home in New Orleans its "Mediterranean Puppy Drum Fish" perfect during the Lenten Season
3 tomatoes, chopped
2 tablespoons olive oil
1/2 onion, chopped
2 garlic cloves, minced
24 Kalamata olives, pitted and sliced
2 tablespoons capers
6 leaves of fresh basil, chopped
Salt and pepper to taste
4-5 oz filets of puppy drum fish
1/4 cup white wine
1. Heat olive oil in large skillet over medium heat. Add onions and garlic until tender. Add tomatoes and cook until tender.
2. Mix in wine, olives, capers, basil, salt and pepper. Reduce heat and cook until mixture is hot and bubbly.
3. Place fish in skillet with sauce mixture and cover with foil and banke in preheated oven for 10-15 minutes.
4. Fish should flake easily with a fork when done.
