Stone Ground Gouda Cheese Grit Cakes

Stone Ground Gouda Cheese Grit Cakes

Ingredients:

1 – 2 lb bag of stone ground grits

64 oz chicken stock

64 oz whole milk

1 cup heavy cream

1 lb unsalted butter

1 tsp white pepper

2 tsp kosher salt

1 lb smoked gouda grated

Procedure:

Bring stock to a boil

Add grits and stir consistently until the liquid is absorbed, reduce heat to simmer

Add milk, stir until mixed well, cover pot for 12 minutes

Add butter, cream, gouda; stir until mixed well

Cover and let sit for 10 minutes

Salt and pepper to taste

For the grit cakes, spread the grits onto cookie sheet pans coated with nonstick spray

Let the grits cool and cut them into circles (or desired shape) with a cookie cutter
