Chef John Folse Makes Double Berry French Toast Casserole

NEW ORLEANS (WVUE) - Why not serve your mother breakfast in bed on her day? Everybody loves French toast, and Louisiana strawberries and raspberries, plump, ripe and in season, are the perfect accompaniments to this classic breakfast dish. I love you, Mom!

Prep Time: 1½ Hours

  • Yields: 8 Servings
  • Ingredients:
  • 12 ounces raspberries
  • 16 ounces strawberries
  • 12 ounces French bread, cut diagonally into 16 slices
  • 10 ounces cream cheese, softened
  • 5 tbsps granulated sugar, divided
  • 5 large eggs, lightly beaten
  • 2 cups whole milk
  • 1 tbsp vanilla extract
  • ½ tsp ground cinnamon
  • ¼ tsp salt
  • pinch ground nutmeg
  • 2 tbsps turbinado (raw) sugar
  • warm maple syrup for serving
  • fresh strawberries for garnish
  • fresh raspberries for garnish
  • sweetened whipped cream for garnish


NOTE: Soften cream cheese by place at room temperature for a minimum of 4 hours. Set aside. In a medium bowl, combine 12 ounces raspberries, 16 ounces strawberries and 2 tablespoons granulated sugar, tossing gently to coat. Let stand 30 minutes. Strain berry liquid into a medium bowl, reserving berries. Add softened cream cheese to berry liquid, stirring to combine. Spread cream mixture evenly over one side of all bread slices. Place 8 bread slices, cream cheese-side up, onto bottom of a 9" x 13" baking dish in a single layer. Spread evenly with macerated berries then top with remaining 8 bread slices, cream cheese-side down. Set aside. In a medium bowl, whisk together eggs, milk, vanilla extract, cinnamon, salt, nutmeg and remaining 3 tablespoons granulated sugar. Pour milk mixture evenly over bread slices then sprinkle with turbinado sugar. Cover with foil and refrigerate 8 hours or overnight. When ready to cook, preheat oven to 350°F. Bake casserole, uncovered, 50 minutes or until top is lightly browned and set. NOTE: You may wish to bake this casserole the night before, cut into equal serving pieces and microwave on high 2–3 minutes or until heated to desired temperature. Serve with warm maple syrup and garnish with fresh berries and whipped cream.
