Celebration Recipe: Golden Beet sliders

Yields: 1 serving


2 each                          Multi-grain slider buns (or dinner rolls), sliced in half
2 slices                         Roasted golden beets (recipe below)
2 each                          Goat cheese balls (recipe below)
2 tablespoons             Orange marmalade
4 ounces                      Baby arugula

Pre-heat oven to 400F. Slightly flatten each goat cheese ball and place on top of beet slices. Heat beets and slider buns in the oven for about two minutes.  Remove buns. Cook beets for another 2-3 minutes. Meanwhile, spread ½ tablespoons of orange marmalade on each top- half of slider buns. When ready, place beets and goat cheese on bottom bun.  Top with 2 ounces arugula, and top bun.

Roasted Golden Beets

3-4 each                      Golden beets, large
2 teaspoons                Unsalted butter, divided
2 teaspoons                Salt
2 teaspoons                Black pepper

Preheat oven to 400F. Wash beets thoroughly.  Individually wrap beets in foil, with ½ tsp butter, salt, and pepper. Bake about 45 minutes, or until thin bladed knife passes easily into beet. (cooking times will vary depending on beets.) Unwrap, cool, and peel beets.  Skins should remove easily.  Slice into ½" slices.

Herbed Goat Cheese Balls

Yields: 8 servings


1 pound                       Fresh goat cheese
2 tablespoons             Parsley, chopped
1 tablespoon               Basil, chopped
½ tablespoon              Thyme, chopped
1 teaspoon                  Salt
½ teaspoon                 Black pepper


Combine all ingredients thoroughly.  Portion into 1 oz balls.
