Celebration Recipe: Italian Sausage Flatbread Pizza

Italian Sausage Flatbread Pizza

Ingredients
1 each                          Flour tortilla, 10”

1/4 cup                        Marinara Sauce (recipe below)

1/2 cup                        Shredded Mozzarella

4 ounces                      Creole Country Italian Sausage, bulk

Procedure
Pre-heat oven to 350F.  Heat a skillet over medium heat. Crumble sausage into the pan and allow to simmer. Turn over the sausage and continue cooking until the meat browns and there is no pink. Drain the meat into a strainer to eliminate excess grease and oil. If desired, pat dry with a paper towel to further remove grease. Spread marinara sauce even over one side of tortilla.  Top with evenly with shredded mozzarella and Italian sausage.  Bake 5-7 minutes, until cheese has melted and edges or tortilla start to brown.

Marinara Sauce

Yields: 1 quart

Ingredients
1 tablespoon               Olive oil

1/3 cup                        Yellow Onion, diced

2 pounds                      Fresh tomatoes, diced

4 ounces                      Tomato paste

1 teaspoon                  Kosher salt

1/2 teaspoon              Black pepper

1 tablespoon               Sugar

Procedure
Sauté onions in olive oil until translucent.  Add remaining ingredients. Simmer until thickened, 1.5-2 hours. Puree in blender.

    Since the end of October, seven people have lost their lives in fatal fires in Jefferson Parish. The most recent one happened Sunday morning, at around 3:20 AM, on the 4300 block of Anthony Street in Metairie.  Jefferson Parish fire officials say firefighters arrived on scene within five minutes, to find the fire fully involved.
