RECIPE: Italian Sausage Flatbread pizza

NEW ORLEANS (WVUE) - Italian Sausage Flatbread Pizza

1 each                          Flour tortilla, 10"

1/4 cup                        Marinara Sauce (recipe below)

1/2 cup                        Shredded Mozzarella

4 ounces                      Creole Country Italian Sausage, bulk

Pre-heat oven to 350F.  Heat a skillet over medium heat. Crumble sausage into the pan and allow to simmer. Turn over the sausage and continue cooking until the meat browns and there is no pink. Drain the meat into a strainer to eliminate excess grease and oil. If desired, pat dry with a paper towel to further remove grease. Spread marinara sauce even over one side of tortilla.  Top with evenly with shredded mozzarella and Italian sausage.  Bake 5-7 minutes, until cheese has melted and edges or tortilla start to brown.

Marinara Sauce

Yields: 1 quart

1 tablespoon               Olive oil

1/3 cup                        Yellow Onion, diced

2 pounds                      Fresh tomatoes, diced

4 ounces                      Tomato paste

1 teaspoon                  Kosher salt

1/2 teaspoon              Black pepper

1 tablespoon               Sugar

Sauté onions in olive oil until translucent.  Add remaining ingredients. Simmer until thickened, 1.5-2 hours. Puree in blender.
