Chef John Folse: Avocado salsa

(WVUE) - In May, Americans commemorate National Salsa Month each year. This recipe combines avocado and jalapeños to create this tasty salsa. Great for an appetizer with chips or a taco topping.

Prep Time: 10 Minutes

Yields: 3 Cups

Ingredients:

2 ripe avocados, shelled and pitted

2 red jalapeño peppers, fire roasted, stemmed, seeded and chopped

juice of 1 lime

1 tsp granulated garlic

1 cup water

2½ tbsps minced fresh cilantro

3 tbsps finely minced onion

salt to taste

Method:

In bowl of a food processor, combine avocado, jalapeño, lime juice, granulated garlic and water. Purée mixture on high for 10 seconds or until jalapeño is finely minced. Transfer mixture to a medium bowl then stir in cilantro and onion. Season to taste using salt. Adjust seasonings if necessary. Cover and chill in refrigerator until ready to use. Serve with your favorite corn or tortilla chips.
